Salmon Fingers
Salmon has so many health benefits, but kids don't care about that at all. Fine. “Hey kids, here's another fried thing for you to mindlessly consume.” *Wink wink*

SERVES 3-4
INGREDIENTS
- 1lb boneless skinless salmon fillet
- 1 cup of Italian breadcrumbs
- Salt and pepper to taste
- 1 egg
- 1 cup of milk (your choice)
- 2 cups cooking oil
DIRECTIONS
Pour the oil in a skillet and warm to low-medium heat.
Cut the salmon into "tenders" or nuggets and season with salt and pepper.
In a mixing bowl, whisk the egg and milk until smooth.
Add the salmon to the egg mixture, ensuring salmon is covered.
Coat the salmon in breadcrumbs and place in hot oil.
Turn over once sides begin to brown (2-4 mins) and repeat for the other side.
Remove to a drying rack or paper towel-lined plate to dry.
Allow them to cool a bit and serve.
